This slow-cooker chicken Alfredo recipe has all the indulgence of a traditional bowl but with set-it-and-forget-it convenience.

Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 2 tablespoons butter
  • 3 cups chicken broth
  • 2 cups heavy whipping cream
  • 1 small onion, chopped
  • 3 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon pepper
  • 1 pound uncooked penne or rigatoni pasta
  • Shredded Parmesan cheese, optional

Directions

  1. In a large skillet, brown chicken in butter in batches. Transfer to a 5- or 6-qt. slow cooker. In a large bowl, combine the broth, heavy cream, onion, garlic, Italian seasoning and pepper; pour over chicken. Cover and cook on low for 4-5 hours or until chicken is tender.
  2. Remove chicken to a cutting board. When cool enough to handle, shred with two forks. Keep warm.
  3. Meanwhile, add pasta to slow cooker. Cook on low until pasta is tender, 20-25 minutes. Add chicken back to slow cooker, stir to combine. Serve with shredded Parmesan cheese.
