My love for deviled eggs runs deep. In my family, they’re a must-have for every summer cookout, birthday party and holiday table. My go-to deviled egg recipe is committed to memory and as classic as it gets: just mayo, mustard, a splash of vinegar and a pinch of salt mixed into the yolks. You’d think a deviled egg purist like me couldn’t be swayed, but when this recipe for million-dollar deviled eggs crossed my desk, I knew I had to use it to create my next batch.

  • Butter: The secret ingredient! Just a tablespoon adds a velvety texture and helps the filling hold up under bonus toppings. Be sure to start with softened butter and use the real thing; substitutes like margarine or blended spreads won’t deliver the same rich flavor or silky texture.
  • Pickle juice: Sweet pickle juice adds a subtle tangy-sweet lift that cuts through the richness of the filling. For a sharper, more savory flavor, try swapping in dill pickle juice.
  • Mustard: Equal parts yellow and Dijon mustard give the filling tangy depth and perfectly balance the richness of the yolks, butter and mayonnaise.
  • Sugar: Just a touch balances the tang and rounds out the other flavors without making the eggs taste overly sweet.
  • Hot pepper sauce: A dash adds gentle warmth and complexity. If you’re sensitive to spice, you can leave it out.

Using a very sharp knife, cut the eggs in half lengthwise. Using your fingertips or a small spoon, remove the yolks, being careful not to tear the egg whites. Place the yolks in a small bowl and set the whites aside.

Step 2: Make the filling

Use a fork to mash the yolks as finely as possible. Stir in the mayonnaise, butter, pickle juice, mustards, sugar, salt, pepper and hot pepper sauce, mixing until the filling is smooth.

Editor’s Tip: Make sure the butter is fully softened so it blends easily and creates a silky filling. If it’s cold, it’ll create small lumps.

Step 3: Fill the eggs

Spoon or pipe the filling into the egg whites, mounding or swirling it slightly. Carefully place the filled egg halves on a serving platter. Unless you’re serving them immediately, cover the egg platter with a lid that doesn’t touch the filling and refrigerate until serving time.

Editor’s Tip: A piping bag with a large star tip gives the eggs an eye-catching swirl, but a spoon works just fine for a rustic look. If you don’t have a piping bag, spoon the filling into a zip-top bag with one corner snipped.

Step 4: Garnish and serve

Just before serving, sprinkle the deviled eggs with paprika. If desired, top each with crumbled bacon and a pickle slice.

  • Replace the pickle juice: For anyone who doesn’t love pickles—or doesn’t have a jar on hand—use plain white vinegar instead.
  • Add herbs: Mix finely chopped fresh herbs, such as chives, parsley or dill, into the yolk mixture for extra color and a garden-fresh flavor.
  • Finish with a pickle: Cornichons are a classic, but why stop there? Top your million-dollar deviled eggs with finely chopped pickled red onions or pickled jalapeno rings for an elevated tang and satisfying crunch.

Can you store million-dollar deviled eggs?

Yes! Because this recipe contains eggs and dairy, million-dollar eggs need to be refrigerated. A dedicated egg platter is the best storage option—the oval indents keep the eggs upright and prevent them from tipping. Instead of storage wrap, which can smear the filling, cover the platter with an inverted bowl or pan to keep the tops picture-perfect.

If you make deviled eggs often, a covered egg tray may be worth adding to your kitchen collection. In a pinch, you can store the eggs in a regular airtight container. The butter in the filling will firm up in the fridge, so for the best texture, let the eggs sit at room temperature for 10 minutes before serving. For food safety, deviled eggs should not be left out on a table or buffet for longer than two hours.

How long do million-dollar deviled eggs last?

Leftover million-dollar deviled eggs can keep for up to four days in the fridge, but they taste best when enjoyed within a day.   • 1 tablespoon butter, softened
  • 2 teaspoons sweet pickle juice
