Cream cheese is the secret to this luscious garlic cream sauce that clings to every strand of pasta.

This garlic cream sauce will make your house smell like an Italian grandmother’s kitchen. Butter sizzles in a hot skillet, garlic turns golden and fragrant within seconds, and cream cheese melts into a thick, tangy sauce before you’ve even had time to boil the pasta water. The whole thing comes together in under 10 minutes, which feels almost unfair given how rich and polished the result tastes.

You could easily pay $20 for a bowl of fettuccine Alfredo at a restaurant. But this version, more of a riff than an exact Alfredo sauce, is made with ingredients you probably already have in your refrigerator and delivers that luxurious, stick-to-your-ribs satisfaction without the markup or the wait for a table. Swirl it over hot noodles, scatter some parsley on top and you’ve got a weeknight dinner everyone will look forward to.

Ingredients for Garlic Cream Sauce

  • Butter: You’ll use butter to saute the garlic. Butter also contributes a silky mouthfeel, rounding out the finished cream sauce.
  • Garlic: Minced garlic infuses the butter with an aromatic, pungent flavor that defines this classic sauce. Cooking the garlic briefly mellows the raw bite while releasing its essential oils. Recipe contributor Joy McQuaid from Darlington, Wisconsin, suggests altering the garlic to your taste—go big with extra or scale back.
  • Cream cheese: Cubed, tangy cream cheese adds body and richness. It also helps emulsify the sauce, creating a smooth, cohesive texture.
  • Heavy whipping cream: The high fat content in this dairy staple gives the sauce its luxurious, velvety consistency.
  • Parmesan cheese: Shredded and stirred in at the end, this aged cheese contributes nutty, savory depth. Its natural saltiness seasons the sauce while adding a slightly granular texture.
  • Pepper: A small amount provides gentle heat and subtle complexity. It balances the richness of the cream and cheese without overpowering the garlic.
  • Fettuccine: These broad, flat noodles provide the perfect surfaces for the sauce to cling to. Hot pasta also helps the sauce maintain its temperature when served. Substitute another favorite pasta shape if you prefer.
  • Parsley: This optional herb adds a pop of fresh color and a mild, grassy note. Sprinkling it over the finished dish brightens both the appearance and the flavor.

Directions

Step 1: Make the sauce

In a large saucepan or skillet, melt the butter over medium heat. Add the garlic, cook and stir for one minute. Stir in the cream cheese until melted. Gradually add cream. Bring to a boil. Reduce the heat and simmer, uncovered, until slightly thickened, three to five minutes.

Step 2: Finish and serve

Stir in Parmesan cheese and pepper. Serve over pasta. If desired, garnish with parsley and additional Parmesan cheese.

Garlic Cream Sauce Variations

  • Add sun-dried tomatoes: Stir in 1/4 cup chopped sun-dried tomatoes along with the Parmesan for a tangy Mediterranean twist.
  • Make it spicy: Add a pinch of red pepper flakes when cooking the garlic to give the sauce some heat.
  • Swap in goat cheese: Replace the cream cheese with an equal amount of soft goat cheese for a tangier, more complex flavor profile.
  • Stir in fresh spinach: Wilt a few handfuls of baby spinach into the finished sauce for added color, nutrition and a mild earthy note.
  • Fold in mushrooms: Saute sliced cremini or shiitake mushrooms in the butter before adding the garlic for an earthy, umami-rich variation.

How to Store Garlic Cream Sauce

Let the sauce cool to room temperature before transferring it to an airtight container. Store it in the refrigerator for up to four days. Give it a good stir before using, since the sauce may separate slightly as it sits.

How should you reheat garlic cream sauce?

Reheat garlic cream sauce gently over low heat on the stovetop, stirring frequently to prevent scorching. Add a splash of cream or milk as needed to loosen the sauce if it has thickened in the refrigerator. Avoid using high heat, which can cause the dairy to separate or become grainy.

How can you thicken garlic cream sauce?

While this garlic cream sauce should be thick enough (because of the heavy cream and cheese), you can add more thickness by adding more Parmesan cheese or stirring in a cornstarch slurry, which is a great way to thicken any sauce.

How can you use garlic cream sauce?

You can use garlic cream sauce spooned over pasta, meat or seafood. Try it in this creamy chicken and pasta dish or with this creamy salmon linguine.
