Chia Seed Jam

This easy four-ingredient chia seed jam is a healthy alternative to traditional jam, with less sugar and with added protein and fiber.

Ingredients

  • 2 cups frozen unsweetened raspberries
  • 2 tablespoons chia seeds
  • 2 tablespoons honey
  • 1 tablespoon freshly squeezed lemon juice

Directions

  1. Place raspberries in a large saucepan over medium-high heat. Cook until the berries are heated through and beginning to break down, 5-6 minutes, stirring occasionally. Use a fork or potato masher to mash the berries to desired consistency. Remove from the heat; stir in chia seeds, honey and lemon juice.
  2. Transfer to a jar; let cool slightly. Chill, uncovered, for 1-2 hours or until completely chilled. Fit with a lid to store.
