Can you make Irish stew in a slow cooker?

You can definitely make Irish stew in the slow cooker with a few small adjustments to our stovetop Irish beef stew. Start by browning the bacon and beef in a large pot or Dutch oven. Place chopped veggies in the bottom of a slow cooker and top with the meat.

In a bowl, mix tomato paste, broth, beer and seasonings, then pour into the slow cooker. Cover and cook on low for seven to eight hours, or until the meat is very tender. In the last 30 minutes, mix together a cornstarch slurry and stir it into the stew along with frozen peas. The potatoes will be very soft, so take care when stirring and serving so they don’t mash into a puree.

Is there a traditional Irish side dish I can make in the slow cooker?

Slow-cooker corned beef cooks potatoes, cabbage, carrots and onions right alongside the meat for deeply flavored veggies. Colcannon and mashed potatoes can be started on the stovetop, then kept warm or reheated the next day in a slow cooker.
