I Tried the Viral 2-Ingredient Cheesecake, and I Was Blown Away

It seems like there’s a viral hack for everything these days, especially if you spend a lot of time on social media. Lately I’ve seen everything from how to make pickled avocados to a shredded tofu prep method that’s guaranteed to win over everyone. But when I saw this latest sensation, I was incredibly skeptical.
The hack was for a two-ingredient cheesecake using Biscoff cookies and Greek yogurt. I saw so many videos of this recipe on Instagram, TikTok and even the Today Show that I knew I had to try it and see what it actually tasted like. Cheesecake has a very specific taste and texture, and I was curious to see how well this hack held up. I went in skeptical yet curious, but nothing could have prepared me for the outcome.
What is the viral two-ingredient cheesecake?

The recipe really couldn’t be more straightforward: You place Biscoff cookies in a container of Greek yogurt, and let them sit in the fridge overnight. The result is a single-serve “cheesecake” that you can eat with a spoon. The cookies soften as they soak up the yogurt’s moisture, giving them a more crumbly, crust-like texture.
Most videos I’ve seen have used vanilla Greek yogurt, but I decided to go a slightly more decadent route by using a cold brew coffee–flavored yogurt. I wanted to evoke the taste of a tiramisu cheesecake, which is one of the best desserts ever invented. I also used the Icelandic Provisions skyr since the shape of the container was perfect. The rectangular cookies would fit lying in a row and I wouldn’t have to break them into smaller pieces.
I peeled off the lid and stirred up the yogurt container. Then I gently placed cookies lengthwise into the container, one at a time. I ended up being able to fit six cookies into the yogurt, and I smoothed any excess yogurt that popped up over the top of the cookies. Next, I placed it inside a glass food storage container and placed it in my fridge overnight. And then I forgot that I had done that, so it stayed in my fridge an extra night.
How does the viral two-ingredient cheesecake taste?

When I took my little container out of the fridge, I was still skeptical. I figured it would taste like yogurt and cookies. But I was shocked from my very first bite. Not only did it taste good; it tasted like cheesecake. I couldn’t believe how well these two basic ingredients combined into a delicious single-serving dessert. Honestly, I wonder if leaving it to “soak” in the fridge for two nights instead of one helped with the texture and overall creaminess.
Using the cold brew–flavored skyr was a great way to try out this recipe because it added so much depth of flavor. And skyr is thicker and creamier than your standard Greek yogurt, which made for an unbelievable texture. I honestly can’t wait to make this with every flavor that my grocery store carries! Icelandic Provisions also has a salted caramel and banana flavor that I am going to try out next, because that sounds like absolute heaven.
You can basically add as many or as few Biscoff cookies as you like. I think that the crust is the best part of pretty much any dessert, so that’s why I jammed six cookies into my yogurt. But you can add more or less; I’m sure it will be equally creamy and delicious.
Most of my family doesn’t actually enjoy cheesecake, so I am really happy that I can make this any time I want to enjoy a “slice.” I know that not every viral hack you see online can be trusted. But I guarantee that this one is a winner.
