Our February Challenge

Butter swim biscuits throw out the rule book on a classic batch of homemade biscuits. The latter kneads very cold butter into the biscuit dough, then goes through a slightly laborious rolling, folding and cutting process, creating those quintessential flaky, pull-apart layers.

But butter swim biscuits incorporate the butter in a whole different way. All the butter is melted in the pan before the buttermilk biscuit dough is patted on top. The dough “swims” in the butter as it bakes, slowly absorbing it, while the outside turns crispy and golden brown, much like focaccia. It’s like the most delicious cheat code in the world!
